Beauty Foods: Shredded Chicken Slaw with Tahini Dressing

In full transparency this recipe was supposed to be Shredded Chicken Rice Paper Rolls with a Tahini Dipping Sauce – I envisioned beautiful, neat rice paper rolls with beautifully colored veggies inside with a cute pot of dipping sauce next to them.

But I didn’t have time, and if I don’t have time, then neither do you. I develop all my recipes with my clients and followers in mind, and I know you want to eat a healthy diet, packed with gut health and beauty nutrition benefits. But it also has to be quick, simple to make and easy to eat whilst you juggle work, kids, responsibilities and a million other things.

Shredded Chicken Slaw with Tahini Dressing

(Serves 2)

For the slaw:

  • 2 chicken breasts, cooked
  • 1/2 red cabbage
  • 2 large carrots, peeled
  • 1 large zucchini

For the dressing:

  • 1/4 cup tahini
  • 2 inches ginger, grated
  • 2 tablespoons sesame oil
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon tamari
  • 1 tablespoon coconut aminos
  • Sesame seeds for topping (optional)

Finely shred all of the slaw ingredients in a food processor (alternatively you can do this by hand). Make the dressing by combing all of the ingredients in a bowl, dress the slaw, then eat!
