This Collagen Crunch Bar recipe is from the GLOW phase of my new Beautiful Skin From Within program!
These bars are the perfect healthier treat to enjoy as a midday pick-me-up or to satisfy a post-dinner sweets craving. They are full of nourishing ingredients such as pumpkin seeds, sunflower seeds, tahini and hemp seeds, as well as Equip Foods collagen, which can promote beautiful skin from the inside out.
Plus, they’re naturally sweetened with dried apricots as well as optional stevia, so they are suitable for those following the Lean & Clean lifestyle. Store in the fridge or freezer for the week (but they might not last that long).
Ingredients
- 1/4 cup sunflower seeds
- 1/4 cup pumpkin seeds
- 1/4 cup tahini
- 3/4 cup dried apricots
- 2 tablespoons hemp seeds
- 2 servings Equip Foods Collagen (save 15% by purchasing here)
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 5 drops organic stevia (optional)
- 1 bar dark chocolate (85% or above)
- 2 tablespoons Lil Bucks Sprouted Buckwheat Crunch
Directions
Place all of the ingredients except the dark chocolate and the buckwheat in a food processor, and blitz for 60 seconds.
Line a 15×13” (or similar) dish with greaseproof baking paper, and press down the mixture firmly and evenly.
Melt the dark chocolate and pour over the seed mixture, then sprinkle with the buckwheat crunch.
Freeze for a minimum of 3 hours, then slice into 6 equal size bars.
