High Protein Ham and Egg Cups

As the summer draws to an end and all of our work schedules ramp up its important to make sure you have healthy, easy to make, ready to go meals on hand as your days get busier.

These High Protein Ham and Egg Cups have been my go-to for meal prepped breakfast as they are delicious and so easy to make. Prep a batch of these egg cups at the beginning of the week, and you’ll have grab-and-go meals ready for the next few days.

Each cup has around 10g of protein, so I typically eat 3 as part of my Fat Burning Foods Formula. This ensures that my blood sugar is balanced until lunch and it keeps me in fat burning mode.

Directions

Preheat oven to 400 and lightly grease a muffin tray.

Add a slice of ham to each section followed by few pinches of spinach. Crack an egg into each cup and season with salt and pepper

Cook for about 12-15 minutes until whites are set and the eggs yolks reach desired doneness.
