This Peanut Butter and Chocolate Protein Fudge, one of the recipes from my Lean & Clean diet plan for women is the perfect combo of salty and sweet, helps you curb cravings, and won’t spike your blood sugar.
Sugar-Free Peanut Butter and Chocolate Fudge Recipe
Yields 8-10 servings
Ingredients
• 30g vanilla protein powder
• 1/2 cup almond flour
• 1/2 cup peanut butter
• 1/4 cup coconut oil
• 2 tablespoons sugar free maple syrup
• 1/4 cup sugar free dark chocolate chips
• 1/4 cup chopped cashews
• Pinch of Himalayan salt
- Gently melt the coconut oil, then stir in the maple syrup and peanut butter. Leave to cool slightly.
- Place the other ingredients in a large mixing bowl and combine.
- Pour the liquid mixture into the bowl and stir well.
- Line an 8 x 5 freezer proof dish with parchment paper, then pour in the fudge mixture. Top with extra chocolate chips and leave to set in the freezer for a minimum of 3 hours.
