Beauty Foods: Beet, Salmon and Walnut Skin Salad

Early spring is arugula season, and I love using this peppery leafy green as a salad base as it’s wonderful for digestion, alkalizing and high in sulfur, a beautifying mineral which cleanses the liver and skin.

A true beauty food, sweet beets pair perfectly with the slightly bitter arugula, and they are packed full of phytochemicals that help to upregulate our bodies natural detoxification process, contain collagen boosting Vitamin C and are a great source of potassium, a mineral and electrolyte essential for healthy circulation and glowing skin!

Salmon and walnuts are full of healthy fats that help keep your skin looking firm and youthful, whilst minimizing inflammation and the risk of breakouts.

Place all the ingredients except the dressing in a large bowl and combine. Make the dressing by putting the ingredients in a mason jar and shaking together, and dress the salad.
