Sugar Free Apple Muffins

Tim and I recently went on our annual apple picking trip, which means we came home with pounds of fresh apples. I have been trying to figure out how to use up all of the apples and created these Lean & Clean Apple Muffins!

They’re loaded with protein thanks to eggs and protein powder, and are free of added sugars, so they make the perfect breakfast or quick snack on-the-go. Plus, they’re gluten-free and dairy-free, so they’ll be a hit no matter your diet.

Sugar Free Lean & Clean Apple Muffins

Ingredients:
1 medium apple, finely chopped
1.5 cups almond flour
2 scoops vanilla protein powder (I like Equip)
1/2 teaspoon baking powder
2 teaspoons cinnamon
1.5 teaspoons allspice
3 eggs
1/3 cup coconut oil, melted and cooled

Directions:
Preheat oven to 350 degrees.

Mix all of the dry ingredients in one bowl, and whisk the eggs and coconut oil together in the other. Combine all of the ingredients together (the mixture may seem dry, but the apples will release a lot of moisture), and add the mixture to a greased muffin pan.

Bake for 25-30 minutes or until fully cooked and golden brown.
