Gut Healing Carrot and Ginger Soup with Bare Bones Broth

You’ll love this new Carrot and Ginger Soup recipe made with my favorite bone broth from Bare Bones Broth. I love cooking with Bare Bones Broth as it is a great way to add gut-healing collagen and gelatin without me having to spend hours making my own broth. I’ll either sip on a warm cup as a protein-packed, nourishing snack or add it to soups and sauces such as in this recipe from my Lean & Clean Program. 

Bone broth is amazing for gut health because it provides beneficial minerals, nutrients and amino acids that our bodies need to properly function. Collagen can reduce inflammation and even repair damage to the lining of your gut. And, the many nutrients found in bone broth support the good bacteria in your gut, which means better digestion, immunity and potentially even mood!

Consuming collagen may also have a noticeable impact on your appearance. Collagen is responsible for the strength and elasticity of our skin, but as we age, we begin to lose the collagen in our skin. Adding bone broth into your diet is a great way to restore this elasticity and provide a youthful hydrated glow by nourishing your body from within. It may even help reduce fine lines and wrinkles!

 

Carrot and Ginger Soup

(makes 1-2 servings)

Ingredients:

  1. Heat the avocado oil in a large pot over medium heat. 
  2. Add the onions and salt and pepper and cook until softened, stirring occasionally for about 8 minutes. Add the garlic and the carrots to the pot and cook for a further 8 minutes, stirring occasionally.
  3. Add the ginger, apple cider vinegar, and bone broth. Reduce to a simmer and cook until the carrots are soft, (about 30 minutes).
  4. Cool slightly and transfer to a blender. Blend until smooth. Taste and adjust seasonings. Add honey, if desired. 
  5. Top with a drizzle of extra virgin oil and freshly ground black pepper.
