How To Make My Shredded Chicken and Mango Salad 

This light and bright Chicken and Mango Salad is perfect for those hot summer days when you want a quick and easy lunch or dinner that is packed full of anti-aging protein, glow giving antioxidants and plumping healthy fats.

A diet that is low in protein can be a key contributor to premature aging – when we consume protein it breaks down into amino acids that are literally the building blocks for our skin. If we are not consuming enough protein then our body will prioritize it for essential functions such as keeping our organs healthy, and our skin will suffer. I recommend consuming at least 120 grams of great quality protein a day.

The right types of fat are also essential for healthy skin, and the two I’ve used here, avocado and extra virgin olive oil are especially beneficial for skin health. Great quality fats help keep our skin cell walls plump and fluid, and Vitamin E (found in avocados and EVOO) works as an antioxidant to prevent skin damage from free radicals.

I’ve used mango in this salad to give it a pop of summer sweetness, and I’m all for using slightly higher sugar fruits (such as mango) when they are in season as long as it is just 1/2 a cup a day. Mango is a great source of Vitamin A which is essential for healthy skin turnover leaving your skin looking fresh and glowing.

Cook the chicken breasts and leave to cool. I find the easiest way to do this in in my Instant Pot, simply, add 1 cup of water or broth/stock to the Instant Pot, add the chicken breasts, season, and cook for 12 minutes on manual (a little longer of the breasts are thicker).

Make the dressing by combining all of the ingredients in a food processor, blender or mason jar, and combing.

Place all of the salad ingredients in a large bowl, dress, and eat immediately.
