One of the ways I stay happy and healthy through the holidays is to ‘control the controllable’, which means sticking to my Lean and Clean eating style to leave room for holiday treats and meals (yes, I will have a glass of organic red wine and a slice of Gluten Free Vegan Pumpkin Cheesecake, thank you very much)…!

 

Whilst salads are a great lunch option during the summer month I crave warm, comforting soups in the winter. This Mediterranean Chicken and Lemon Soup is a new recipe, suitable for both my Lean and Clean and 28 Day Guided Gut Healing Program that elevates a traditional chicken soup with a pop of citrusy lemon and salty black olives. It’s super easy to make and is perfect to have on hand for a light lunch or easy low carb dinner.

 

I’m loving giving a Mediterranean twist to my new recipes – the Mediterranean Diet has been proven to provide so many health benefits in terms of sustainable weight loss, lowering inflammation, increasing fibre and antioxidant intake, easing menopause symptoms and lowering BMI and body fat. It’s also a pretty delicious way to eating too, think fresh fruits and vegetables, leafy greens, fish and lean proteins, nuts and seeds, and fresh olive oil!

Packed with Veggies, Lean Protein and Healthy Fats

This soup is the epitome of light and bright eating – it has 2 servings of veggies, organic chicken breast, gut healthy bone broth and alkalising lemon juice, and is dressed with healthy fat packed extra virgin olive oil. Make a double batch and freeze half for when time is tight and you want a nourishing, low carb meal in minutes.

How to Make Mediterranean Chicken and Lemon Soup

Ingredients

(yields 2 servings)

• 2 chicken breasts, cooked and shredded

• 2 cups cauliflower rice (fresh or frozen)

• 2 cups baby spinach, chopped

• 2 cups bone broth

• Juice and zest of 1 lemon

• 1/4 teaspoon Himalayan salt

Garnish with chopped black olives, cracked black pepper, lemon zest and a healthy swirl of Extra Virgin Olive Oil.

Instructions

Place all ingredients in a large pan and heat through thoroughly, stirring throughout. Garnish as above.
