We are deep into the summer months here on the East Coast so today’s Weekly Recipe is a healthy spin on a summer favorite – popsicles! Fun fact, did you know that they are called ‘ice lollies’ in the UK? ; )
My PB and Dark Chocolate Protein Popsicles offer a delicious way to support your metabolism. Greek yogurt, the primary ingredient, is rich in protein, which not only helps in building and repairing tissues but also boosts your metabolism by increasing the thermic effect of food (TEF). This means your body burns more calories digesting and processing protein compared to fats or carbohydrates. Additionally, the probiotic content in Greek yogurt supports gut health, which is essential for efficient digestion and a well-functioning metabolism.
Peanut butter adds healthy fats and additional protein to the popsicles, providing sustained energy and helping to stabilize blood sugar levels. This can reduce cravings and keep you feeling full longer, which is beneficial for weight management. The combination of these ingredients makes the popsicles not only satisfying but also a great option for fueling your body without excessive calories or sugar.
These popsicles are also packed with nutrients that promote healthy skin, hair, and nails. The Greek yogurt provides a good dose of calcium, which is vital for strong bones, hair and nails. Peanut butter is rich in vitamin E, an antioxidant that helps protect your skin from damage caused by free radicals and environmental stressors. The healthy fats in peanut butter also help maintain the skin’s natural moisture barrier, keeping it hydrated and supple.
Dark chocolate, contains polyphenols that can help reduce the effects of skin aging, giving you a youthful glow. The chopped nuts not only add a crunchy texture but also provide additional healthy fats and vitamin E, further supporting skin health.
In a mixing bowl, combine the Greek yogurt, peanut butter and vanilla extract. Stir until the mixture is smooth and well blended.
Pour the mixture into popsicle molds, leaving a little space at the top for expansion. Insert popsicle sticks into the molds. Place the molds in the freezer and let the popsicles freeze for at least 4-6 hours, or until completely solid.
Once the popsicles are fully frozen, melt the dark chocolate chips and coconut oil together in a microwave-safe bowl, microwaving in 20-second intervals and stirring in between until smooth. Prepare a shallow dish with the chopped nuts.
Remove the popsicles from the molds. Dip each popsicle into the melted chocolate, allowing any excess to drip off, then quickly dip the popsicle into the chopped nuts to coat. Place the popsicles on a parchment-lined baking sheet and return them to the freezer for a few minutes to set the chocolate.
