Healthy snacks can be hard to find, but these Choc Chip and PB Protein Balls are a great option to keep in the fridge for when time is tight but you need a quick protein rich, blood sugar balancing option.
The Peanut Butter Chocolate Chip Protein Balls are a nutrient-dense snack designed to support the health needs of women managing stress, inflammation, metabolism, thyroid function, and hormonal imbalances. For those dealing with high cortisol levels, the healthy fats from almond flour, chia seeds, and peanut butter help stabilize blood sugar, preventing cortisol spikes and cravings, while low-glycemic sweeteners keep insulin levels balanced. Those experiencing chronic inflammation benefit from the anti-inflammatory omega-3s found in flaxseed and chia seeds, along with antioxidant-rich vitamin E from almond flour.
For individuals with thyroid issues or metabolic dysfunction, the high protein content and fiber in these bites support muscle maintenance and metabolism, both of which can be affected by these conditions. The fiber also aids digestion and helps regulate appetite. Women experiencing hormonal imbalances can benefit from the magnesium found in almond flour and peanut butter, which aids in hormone balance and energy production, while omega-3s further support hormonal health.
In a large mixing bowl, combine the almond flour, ground flaxseed, protein powder, shredded coconut, and chia seeds. Stir well to mix all dry ingredients evenly.
Add the peanut butter, sugar-free syrup or liquid stevia, and vanilla extract to the dry mixture. Mix thoroughly until the ingredients start to come together.
Gradually add the unsweetened almond milk while mixing, a little at a time, until the mixture forms a dough-like consistency. If the mixture is too dry, add a bit more almond milk.
Once the mixture is well combined and holds together, fold in the dark chocolate chips or cocoa nibs.
Using your hands, shape the mixture into bite-sized balls or bars, placing them on a plate or baking sheet lined with parchment paper.
Refrigerate the protein bites for at least 30 minutes to firm up. Once firm, store them in an airtight container in the refrigerator.
