This week’s recipe is perfect for those struggling with chronic inflammation (think stubborn weight gain, joint pain, skin issues, brain fog and chronic or autoimmune disease) or if you have had a week where you diet included a lot of meals out or sugar and alcohol, which can lead you to become inflamed (hello, holiday season).
The recipe avoids common inflammatory triggers like dairy, refined sugars, and processed oils, instead using avocado oil, rich in anti-inflammatory monounsaturated fats. Turmeric contains curcumin, a compound with strong anti-inflammatory and antioxidant properties that help combat chronic inflammation, a root cause of many conditions including joint pain, gut issues, and insulin resistance. Cumin supports digestion and reduces inflammation by scavenging free radicals, while coriander contains antioxidants and anti-inflammatory compounds that promote healthy blood sugar and reduce oxidative stress. Paprika is rich in capsaicin, which helps to reduce inflammation and support metabolic health. Lastly, cinnamon helps balance blood sugar levels and has anti-inflammatory effects, making it particularly useful for combating insulin resistance and inflammation-related weight gain. Additionally, its low-glycemic nature helps stabilize blood sugar, reducing insulin-driven inflammation.

Preheat the oven to 400°F and line a baking sheet with parchment paper.
In a bowl, whisk together the avocado oil, lemon juice, za’atar spice, garlic, salt, and pepper. Add chicken and chickpeas, tossing to coat evenly.
Transfer the mixture to the prepared baking sheet and bake for 15 to 17 minutes, or until the chicken is cooked through.
Cook the cauliflower rice according to the package directions.
Divide the rice, chicken, chickpeas, and tzatziki evenly between plates. Garnish with cilantro and enjoy!
