I love this salad as it is the perfect way to highlight fresh, seasonal strawberries while incorporating greens (arugula is known to enhance metabolism) and healthy fats from feta cheese. If you are dairy free, however, feel free to substitute the cheese for a plant based alternative.

Ingredients:
For the salad
- 4 large handfuls arugula
- 1 cup strawberries, hulled and sliced
- 1⁄2 cup fresh mint lightly packed
- 1 cup fresh basil lightly packed
- 8oz crumbled feta
- 1⁄4 cup walnuts, lightly toasted
For the dressing
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Directions:
Mix the salad dressing in a jar or small bowl.
Add all of the salad ingredients to a large bowl, then top with the dressing. Mix well to combine and enjoy!
