If you are anything like me then cereal and granola is probably something you really miss when eating sugar free and low carb. The majority of store bought granolas are packed full of sugars, honey and maple syrup that will all spike your blood sugar and switch on fat storage mode – even the so called healthy ones (I see you Purely Elizabeth)...
My homemade granola is not only delicious but also super healthy, its sugar free, low carb and is packed with nuts and seeds making it a great source of vitamins and minerals, healthy fats and fibre. I love to combine it with Greek yoghurt and berries for a quick and easy healthy breakfast.
Ingredients
Dry Ingredients:
- 1 cup shredded coconut flakes
- 1 cup sliced almonds
- 1/2 cup pecans (or your choice of nut)
- 1/2 cup flax seeds
- 1/2 cup hemp seeds
- 1/2 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 2 tablespoons chia seed
- 2 teaspoons cinnamon
Wet Ingredients:
- 1/4 cup sugar free maple syrup
- 1/4 cup melted coconut oil
- 2 egg whites (omit if vegan)
Directions
Preheat the oven to 140C/280F. Line a large baking tray with parchment paper.
Combine the wet excluding egg whites in one bowl and the dry ingredients in a separate bowl.
Whisk the egg whites with fork until foamy. Stir the wet ingredients into the dry ingredients then mix through egg whites.
Spread the mixture out evenly on the tray. Bake for 45 minutes – DO NOT STIR – until golden. Check at 35 minutes. Turn the oven off, leave the granola in the oven, and open the oven door open a bit. Leave the granola to cool. The colour will deepen and it will firm up.
Once cool, break into clusters. Store in an airtight container.
