The spices in these Gingerbread Honey Bites literally scream Holidays! They are so simple to make, and are perfect for a seasonal mid-afternoon mini meal with a cup of herbal tea. They are inspired by the first ever holiday card Husband Hanway sent me when we were doing long distance (pictured here) – I’ll always treasure it!
Yield: 10 bites
- ¾ cup almond butter⠀
- ½ cup mixed nuts, chopped ⠀
- ½ cup shredded unsweetened coconut⠀
- ½ cup ground flaxseed⠀
- ¼ cup hemp seeds⠀
- 1 scoop vanilla or unflavored collagen powder or plant based protein powder
- 2 tablespoons coconut oil, melted ⠀
- 2 tablespoons honey ⠀
- 1 teaspoon cinnamon⠀
- 1 teaspoon ginger⠀
- ¼ teaspoon cloves⠀
- 1 teaspoon freshly grated ginger or ginger powder ⠀
- Pinch of Himalayan salt⠀
Place all ingredients in a food processor and combine for 2-3 minutes. Place the mixture in the fridge and leave to cool for 20 to 30 minutes, then remove and roll into balls. Will keep in the refrigerator for a week – if you can make them last that long!
