I love our weekly local veggie delivery box because it stops me getting in a rut and eating the same veggies week in, week out! As such, this ensures I get a wide variety of micronutrients which is essential for optimum health and can boost your immune system, and therefore means I eat seasonally, which has both environmental and health benefits.
This week’s box included a huge green cabbage which I wanted to turn into something other than slaw, so I decided on this super quick and easy asian inspired recipe, which is perfect for a low carb lunch or 15 minute dinner.
Low Carb Lunch: Sautéed Spicy Cabbage with Shredded Chicken
(Serves 2)
- 2 tablespoons sesame oil
- 1 onion, finely sliced
- 2 cloves garlic, minced
- 2 inched ginger, minced
- 1 large cabbage, shredded
- 2 chicken breasts, cooked and shredded
- 2 tablespoons tamari (gluten free soy sauce)
- Sriracha to taste
- 2 tablespoons sesame seeds
Heat the sesame oil in a large skillet, and sauté the onions, garlic and ginger until soft. Add the cabbage, and cook for a further 10 minutes or until the cabbage is soft. Add the chicken, tamari and sriracha and cook for a further 3-4 minutes, or until the chicken is warm. Top with sesame seeds and serve.
