Vegan Creamy Hemp Seed Pesto and Tofu Sauce

This healthy, low carb comfort food recipe is one of my favourite vegan meals from my 8 Week Lean and Clean Program, which starts 01/11/2021. It’s quick and easy to make, and perfect for those who want to follow a plant based diet meal plan. Plus it’s low carb, gluten free, and high in vegan protein. Enjoy!

 

Plant based recipes that are high in protein and low in carbs are hard to find, but one of my specialties as a Holistic Nutritionist is working with clients who wish to follow a healthy vegan or plant based diet. Ensuring a healthy daily protein intake and a lower amount of carbs is key for a healthy metabolic rate, but sometimes this can be challenging as some vegan proteins are high in on the glycemic index.

That means getting creative in the kitchen with plant based proteins, which is how this delicious vegan pasta sauce recipe was developed!

A Guilt Free Creamy Pasta Sauce

This low fat creamy sauce is not only compliant with my clean eating principles (free from sugar, gluten, dairy and inflammatory fats) but it is also packed with vitamins and minerals, and is high in hunger satiating protein.

If you’re looking for a healthier version of your favourite pasta comfort food, then this recipe is for you. My creamy pasta sauce uses high protein organic tofu meaning its dairy free combined with a delicious hemp seed pesto, and just takes minutes to make.

 

How to Make Vegan Creamy Hemp Seed Pesto and Tofu Sauce

Yields 2-3 servings

Ingredients

• 2 cups fresh basil

• 2 cups fresh or frozen organic spinach

• 1/3 cup extra virgin olive oil

• 1/3 cup hemp seeds

• 1 clove garlic

• 1/4 teaspoon of Pinch of Himalayan salt

• 1/4 teaspoon black pepper

• 1 block organic silken tofu

 

Instructions

  1. Place everything but the tofu in a food processor and combine for 2-3 minutes.
  2. Add the tofu and combine for a further 2-3 minutes, or until the sauce is smooth.

 

Vegan Creamy Pesto Sauce: How to Serve It

This recipe is a great meat-free monday dish and I love to serve it warm over zoodles (zucchini noodles) or Miracle Noodles . You could even stir it in to cauliflower rice for a vegan risotto.
