18 Apr Healthy Comfort Food: Low Carb Turkey Sweet Potato Shepherd’s Pie
Each week Tim and I plan a healthy date night, take one of our favourite comfort food recipes and put a lighter, cleaner, gluten free and dairy free #JennyApproved spin on it. And I don’t know about you, but I am definitely craving healthy comfort food right now!
This week was the turn of one of my favourite healthy recipes, Turkey Sweet Potato Shepherd’s Pie. This easy, family friendly recipe can be assembled ahead of time, then baked in the oven when you are ready to eat. We made this a one pan meal by sauteeing the turkey and vegetables in a large skillet, topping with the sweet potato mash and baking in the oven, which saved on dishes afterwards!
