Sugar-Free Treat Recipe: Peanut Butter and Chocolate Fudge

Just because the holidays are over doesn’t mean you have to forgo all treats – especially when they are low carb, sugar free and #jennyapproved! This Peanut Butter and Chocolate Protein Fudge, one of the bonus recipes from my Lean and Clean Program is the perfect combo of salty and sweet, helps you curb cravings, and won’t spike your blood sugar.

Sugar-Free Peanut Butter and Chocolate Fudge Recipe

Yields 8-10 servings


• 30g  vanilla protein powder

• 1/2 cup tigernut flour (I use Organic Gemini)

• 1/2 cup peanut butter

• 1/4 cup coconut oil

• 2 tablespoons sugar free maple syrup (I use Lakanto)

• 1/4 cup sugar free dark chocolate chips (I use Lilys)

• 1/4 cup chopped cashews

• Pinch of Himalayan salt


  1. Gently melt the coconut oil, then stir in the maple syrup and peanut butter. Leave to cool slightly.
  2. Place the other ingredients in a large mixing bowl and combine.
  3. Pour the liquid mixture into the bowl and stir well.
  4. Line an 8 x 5 freezer proof dish with parchment paper, then pour in the fudge mixture. Top with extra chocolate chips and leave to set in the freezer for a minimum of 3 hours.

Tigernut Flour Alternatives

I love tigernut flour for it’s gut health boosting properties and sweet, nutty taste, but you can replace it with coconut flour in this recipe with great results.
