It’s National CBD Day! I currently can’t make enough of this CBD Raw Lemon Cheesecake featuring Beam CBD Oil – not only is it so moreish, but it’s the perfect Mini Meal for days when you need a helping hand with stress relief…it’s also one of the bonus recipes from my 8 Week Lean and Clean Program!
Low Carb CBD Raw Lemon Cheesecake
(makes 18 servings)
- 3/4 cup almond meal
- 1 cup shredded coconut (+ ¼ cup for topping)
- 1/2 cup raw cashews (soaked overnight)
- Juice of 2 lemons
- Zest of 2 lemons
- 2 tablespoons coconut oil, melted and cooled
- 2 tablespoons coconut milk
- 2 tablespoons Lakanto Maple Syrup
- 1 serving Beam Natural CBD Oil (use code ‘jennyh’ for a 15% discount)
Place all ingredients in a food processor and blend until well combined. Line a 7″x 5″ dish with parchment paper, and add in the cheesecake mixture. Press down, then top with the extra shredded coconut.
Will be ‘set’ after 2-3 hours, keep refrigerated.
