We typically never use all the apples from our annual apple picking trip, but this year I loved finding creative ways to use them in the seasonal recipes for my Lean and Clean Program! Another apple based favourite from this year was these Low Carb Apple Crumble Bars – I made batch after batch as they were just so good!
Apples pair so well with pork as they give a touch of acidity and sweetness to a savory dish, and this new Low Carb Pork and Apple Breakfast Hash is a simple but satisfying low carb breakfast or brunch option thats a cinch to make. We always buy our pork from Butcher Box as we know it has been fed a natural diet, has been humanely raised and tastes so much better than conventionally farmed meat.
Pork and Apple Breakfast Hash
(makes 2 servings)
- 1lb organic ground pork
- 1/2 white onion, diced
- 2 cups delicata squash, cubed
- 1 tablespoon avocado oil
- 1/2 teaspoon each of garlic powder, onion powder, Himalayan salt and black pepper
- 2 handfuls spinach, roughly chopped
- 1 apple, cubed
- Handful of fresh sage, chopped
Heat the avocado oil in a large skillet and add the ground pork, onions and delicata squash. Cook for 10 minutes, then add all the seasonings, apple and spinach. Cook for a further 15 minutes, or until cooked through.
