I’m loving giving a Mediterranean twist to my new recipes – the Mediterranean Diet has been proven to provide so many health benefits in terms of sustainable weight loss, lowering inflammation, increasing fibre and antioxidant intake, easing menopause symptoms and lowering BMI and body fat. It’s also a pretty delicious way to eating too, think fresh fruits and vegetables, leafy greens, fish and lean proteins, nuts and seeds, and fresh olive oil!
This soup is the epitome of light and bright eating – it has 2 servings of veggies, organic chicken breast, gut healthy bone broth and alkalising lemon juice, and is dressed with healthy fat packed extra virgin olive oil. Make a double batch and freeze half for when time is tight and you want a nourishing, low carb meal in minutes.
(yields 2 servings)
• 2 chicken breasts, cooked and shredded
• 2 cups cauliflower rice (fresh or frozen)
• 2 cups baby spinach, chopped
• 2 cups bone broth
• Juice and zest of 1 lemon
• 1/4 teaspoon Himalayan salt
Garnish with chopped black olives, cracked black pepper, lemon zest and a healthy swirl of Extra Virgin Olive Oil.
Place all ingredients in a large pan and heat through thoroughly, stirring throughout. Garnish as above.
