Paleo Thai Fish Soup
A version of this Thai Fish Soup was one of the first dishes I learnt to cook as an adult! I remember a mentor of mine giving me the recipe, and I cooked it every time someone came for dinner at my London apartment. I still love these fresh thai flavours and it’s such a great vehicle for packing in a ton of lean protein, veggies and healthy fats – it honestly keeps you full for hours.
I love this recipe for an easy date night dinner with Tim, it feels like we are enjoying something super special whilst still sticking to the Lean & Clean principles.
How to Make Low Carb Thai Fish Soup
Heat the avocado oil in a large skillet over a medium heat. Add the shallots, garlic, ginger, lemongrass, red pepper, and curry paste, and cook for one minute.
Pour the bone broth and coconut milk into the skillet, add the fish sauce, stir well, and simmer for 10 minutes.
Add the broccoli and cook for a further 3-4 minutes. Add the shrimp, white fish, peas, and bamboo shoots and cook until the shrimp is no longer translucent.
Stir in the lime zest, juice, and cilantro, and serve.
