I originally created this recipe for one of my Private Coaching clients who was recovering from COVID – I wanted to give him a healthier and more nourishing option than the canned soups he was having at the time. I love this soup as it feels so satisfying and tastes delicious whilst being packed full of ingredients that boost detoxification.
I love including bone broth in as many recipes as possible as I truly believe it is a superfood – and as a detox food it’s packed full of specific amino acids and antioxidants that boost liver detoxification we do not find in many other foods. It also helps with gut health and healing leaky gut, and gut health plays a huge role in healthy detoxification.
(makes 1 serving)
• ¼ cup onion, diced
• 1 clove garlic, finely chopped
• 2 cups fennel, finely chopped
• ¼ cup dill, chopped
• Zest and juice of 1 lemon
• 2 cups chicken bone broth
• 1 chicken breast, cooked and shredded
• 1 package shirataki noodles
Sauté the onion, garlic and fennel in avocado oil until soft and slightly golden. Add the rest of the ingredients, stir, and warm through. Serve with a drizzle of extra virgin olive oil.
